There isn't any default - you must specify which one you want:
Router(config-if)#encapsulation frame-relay
Router(config-if)#exit
Router(config)#in s0.1
% Incomplete command.
Router(config)#in s0.1 ?
multipoint Treat as a multipoint link
point-to-point Treat as a point-to-point link
