We are doing the same, but with the help of a vendor. I don't know how to answer your best practices question, but we are using 5596 with 6248, UCS 510, and L3 modules on the 5596. We later found out that the 5K's don't do VDC which would have been helpful, but 7k's do. This solution, coupled with our 5585's are a great solution as we've been in a POC with our Hosting and Storage team for about 5 months. We are also deploying Nexus 1010 for VM control. Our issue now is trying to balance if we'll allow the H&S team manage the Nexus 1k for their VM's or if our team will do it. We have a general rule that it takes to teams to misconfigure something for it to be incorrect. We just don't want to give them too much control, either.
