Most companies I've installed the nexus 1k's in, like the idea because they can give control of the VM veth back to the network teams. If you wanted to leave control in the server teams hands then they could have stayed with the virtual switches/distributed virtual switches If we leave out the other features the 1k gives you.
@charlies, there are lots of was to do the migration but here is the method I like to use.
Determine all of the vlan priorities on the existing 3750 switches that will be migrated over to the 5ks. Create a vPC on the 5ks and interconnect the 5k to the 3750's after you have configured the 5ks vlans to be a a higher value then the 3750. Ensure that you do not add any of the subnets that you are migrating to the 5ks into the 5k routing process yet, as this method will move the the layer2 first then the layer 3 last. After you interconnect the switches and verify all the spanning-tree parameters you can begin moving servers or devices over to the 5ks. All of the traffic flow will traverse the link between the 5ks ad the 3750's so make sure you add enough bandwidth. After you have moved all the devices you can begin the layer 3 migration.
If you are using FHRP let me know because there is a lot to do here.
Based on your companies policies you may need two change control windows to do this. I would suggest doing this in two windows so that you give time for any layer 2 issues to surface as some applications do not like working with the 5ks, a mainly the ones that have built in intelligence as to their gateways and such . The way Cisco HSRP or FHRP works can be an issue for some applications hence the reason they have added other features to the domain configurations.
