protocol type & ethertype

Hi Experts,

I have very little undersatnding for Ethertypes & protocols types.

this is necessary for configuring access-list in switches and in routers
for access-list range 200-299.

i am not able to find in configuration guide also. How will we identify
ethertype or protocol type code during LAB exam.

IS there any show command avilable and nice document on the same.??
