Hi,
I would like to concur with Pramod about the USB converters. I've
experienced problems when using many USB-Ethernet Converters myself, a small
number work fine but when you start to ramp up the number the stability goes
out the window.
A breakout switch can certainly work well - this is what I used in my
environment but depending on the breakoutswitch you have, you may experience
limitations. For example with a 3550 l2protocol tunnelling is not supported
on trunk interfaces but is on a 3560 or 3750. This will result in
unidirectional CDP from your switches beyond the breakout to work (So you
can see the switches from your Routers) but not in the other direction (The
switches wont have the routers as CDP neighbors). STP is a similar issue
which I recently discovered while playing with IRB

As long as you are aware of the limitations, the set up works fine in most
instances and you can rent time on real gear for specific labs if you are
unable to resolve it another way.
Cheers,
Adam
