I think that if you go with dynamips + breakout switch you will need 5
switches. Four for lab and one for breakout. Unless it is possible to
configure one of the switches to be a breakout AND lab switch. Anyone did
that ?

It is possible with either of the options

 Need 12 USB to LAN Converter (personal experience they aren't stable...got
blue screen error while working) OR
- One switch configured as break out switch
