IMHO,
Wouldn't think it matter too much if you use server/desktop versions.
Basically you are after an efficient OS, lots of RAM and high speed
processor. The rest of the software you get in either version is not
directly relevant.
I would go with desktop, it would be easier to use than server and you
never know, you may like all the other features it offers and actually
start using them.
Server is oriented to running web server, DNS server, database, etc.
