If you really want to load balance and the hosts on both switches are on the
same VLAN you could set a SVI interface on each switch and create two
different HSRP groups on each interface. For one group make the active
switch one of the 3560s and for the other group use the other 3560 as
active.
Then you could set up half of your hosts for gateway on HSRP group 1 (eg
10.10.10.1) and the other half for HSRP group two (eg 10.10.10.2)
This way half of your hosts would be using one switch as gateway and the
other half using the other switch and you would still have redundancy.
