Speaking of which:
Soup to Nuts by CCBOOTCAMP is quite impressive and
comprehensive.
The new Class on demand by NMC is just totally
comprehensive and has labs and quizzes per topic (only
Frame Relay at the moment - but if I were just
starting out this 10 hours or so of material could
take me 40 hours or more to actually master - easily).
InternetworkExpert has an awesome Class on Demand two
week program that is fabulous and great for the
beginner.
CBT Nuggets may be one of the best starting points for
a true beginner as well. Slow and easy and about 45
hours or so of instruction - Topic by Topic, then a
full lab, and another later addition for IPv6.
Just to name a few others.
