Richard I will give my opinion but it is just that. If you gather all your
info from the sniffer only on a LAN
network, it will be very difficult to deterimine how these apps will react
on a WAN circuit. Typically in a LAN
environment you don't see much TCP window sizing, scaling etc. Nor do you
see much UDP retrans unless your network just doesn't perform very well in
the first place.
So typically if these apps are used on a LAN most users won't complain.
Obviously if you had a WAN circuit in place using the same apps it would be
pretty easy to determine based on that circuit.
But if these are real time apps I would check the minimal requirements per
session, delay etc. You can then get a rough idea of what BW should be
needed, then do some QOS function to provide the reliability.
Of course the bigger questions I would ask are "how much impact does this
traffic have on your business" and "what kind of budget is available for WAN
circuits"
