Cisco Academy courses are college accreditted. I know for a fact that
at least some universities will be accepting these courses for credit,
because they are working closely with the a local community college that
is a CATC to get the program moved to the university level. As for
CCIE, I doubt anyone would give you credit right off the bat, but you
would probably be eligible to test out of classes. I'm thinking of
looking into DeVry for this fall semester, anyone else had experience
with them?

I checked with devry a while back and they said that
if you sat for and passed module exams related to
networking, you would be exempt from taking the
equivalent class. They promised to work with me if I
went in to talk with them.
