It depends on how deep you want to go with it.
You can setup IP SLAs on your routers and gather the information you are
looking for. This will be command line only however so next you might look
at the free Solar Winds IP SLA Monitor utility. Then if you are looking for
something even more robust you could look at their paid "Voip and Quality
Manager" product.
