My question is: if we don't use: snmp-server enable traps global command, and
since snmp trap link-status is enabled by default per interface, will it still
send?

short answer is yes it will send all traps:

"To enable all Simple Network Management Protocol (SNMP) notification types
that are available on your system, use the snmp-server enable traps command in
global configuration mode. To disable all available SNMP notifications, use
the no form of this command."

trap source is used when you want or need it to come from a specific IP, in
the lab it would be because they told you to, in the real would it would be
because that is the IP you have register as the object-name in the NMS and
when you log the trap you want it to have a name you will know...
