Do you have a few days to read through an answer.

Your questions cover a whole range of issues. It's all scenario dependant. I
have been involved in migration of 2000 site MPLS networks without major
issues. On the other hand did a 20 site MPLS migration that raised a whole
heap of issues.

The best way to cover everything is get as much data up front as possible,
be meticulous in your design and dont assume anything. If something isnt
clear, halt the project and wait for what you require. This is best advice i
can give.
