For R&S I'd recommend Narbik's, it's very much negotiable and follows a well
designed L1/2 map. I guess even he's got some semi L2 mock labs for this.
Tip: It's a good idea to have a summary of the 3560 specific
commands/scenarios that you want to do before jumping on racks. I'd design a
nice and neat L2 lab including almost all the features and attempt it in 3-4
hours. Then you'll have some time to grade yourself and see if you've hit
any issues. A typical case could cover IPv6, SDMs, PVLANs, LS Tracking,
Dot1x (both formats), adjacency (LLDP), logging and Channeling. Some
features in CATs may yield unexpected results, pay close attention to EIGRP
Stub (possible workarounds), PBR and WCCP when you've got only 3560s in your
mock scenario.
