When you are configuring netflow you specify the destination and port of the Netflow collector. You also need to enable ip route-cache flow on the specific interfaces. In regards to MPLS bits and netflow there is a nice write up on CCO in regards to exactly that. I don't have the link offhand but just do a search for it
