With 3560E models and real-life scenario I'd say you have an L2 access
switch with dedicated mgmt interface on switch back side (there are such
on 3560E series), you don't enable IP routing on the switch but make
that interface a routed interface, you assign an IP address on it and
use ip default-gateway a.b.c.d for default GW.

Not sure if it helps though. :-) We have no E-series switches on the lab.
