If you look at CCIE Vendors, I think you will avoid the mostly theory books.

Check out

ation_Proctor_Guide and you'll find a competitively priced bundle of
workbooks, as well as class-on-demand + audio-on-demand products for CCIE
Voice.

Otherwise, I believe the other vendors you'll find for voice (so this isn't
a one-way advertisement!) are Internetwork Expert (potentially still in
beta?), CCBootcamp and Avodaq. I don't recall whether ieMentor has Voice
products as well... Roman hangs out here now and then, so he may be able to
shed light on that.
