Ok,
I use the server version, as I use it for dedicated Dynagen/mips, but if you
want to use the other stuff ie openoffice xwindows etc get desktop.
If you have a 64 bit proccesor get the 64 bit ones.
The ubuntu install is easy download the bin file and pop it in the machine,
if you want to dual boot theres a little more to it, ie create a new
partition first and install to that.

which is a brilliant video on how to get it up and running in 5 minutes.
Only thing I will say is that I use 2GB of RAM on my laptop, I have heard 1
x 2 can make a big difference but I suggest you see how you get on.
