Can I run Set IP Default Next-Hop (IP add of Default Gateway) under a
route-map on any Catalyst 6500 series of switch, or any other layer 3 switch
supports this command? this command does not work on CAT3550 layer 3 and
CAT3750 layer 3 switches, I want to make policy based routing in my VLAN
environment like students VLAN should go through first default gateway and
employees VLAN should go through second default gateway and all the servers
VLAN should go through the third default gateway.

The point using set IP default next-hop gateway is, this command first
searches the locally available route to forward traffic if doesn't find the
route then it sends it to default gateway.

I will appreciate all the responses.
