Protocol NBAR will be your best bet, so your research should be in that
direction, a few command syntax like these should get you going:

class-map match-all p2p-file-sharing
  match protocol fasttrack
  match protocol gnutella
  match protocol kazaa2
!
policy-map p2p
  class p2p-file-sharing
   bandwidth percent 5
!
interface fa0/0
service-policy output p2p
!
