Some IOS versions will automatically detect frame relay
encapsulation on the interface. Look at the show run output before you
start your configuration. If it already has the "encapsulation
frame-relay" command on there try issuing the "default interface"
command before starting your config. As for learning other circuits
from the Frame cloud itself there is no way to prevent this. Just make
sure you look at the "show frame-relay map" output to verify that your
layer 3 to layer 2 resolution is correct before moving on to other
topics.
