There are a lot of options here, actually.

Most of times they should give you a *hint* on how to classify and
prioritize voice traffic.

To classify voice traffic (bearer), usually you may use:

1) Match access-list (the most "widely-scoped" method)
2) Match ip rtp (a bit outdate)
3) Match protocol rtp (the most modern way)
4) Match ip precedence/dscp if voice packets are marked already (most
simple)
5) Use "ip rtp priority" with wfq (this is a prioritization technique
at the same time). A bit outdated by MQC but still nice.

To prioritize voice traffic you basically have these options

1) Legacy PQ
2) LLQ (most common)
3) "ip rtp priority/ip rtp reserve" (the latter is quite a bit outdated)
4) Frame-Relay specific options (Per-VC LLQ, or even PIPQ)
