Gigi my friend,
3 routers are not going to cut it. You need to do some research of your own and look at the web pages of various vendors (ipexpert.com, trinetnt.com, internetworkexpert.com) to find out how many and which routers they are using. You need 6 routers plus 3 backbone routers, plus two 3550 sw, plus a frame-relay switch.
For the lab book, my opinion, I recommend internetworkexpert wb and vedio boot camp is excellent.
