I would say that if it is a protocol that changes its ports dynamically from
the well known standard ones (ftp for eg) match protocol would be the best
option here as the ACL would not be good enough.

Also, by using ACLs, you would possibly have to keep updating them if
subnets were added/removed.

With something like RTP a mix of both would probably be best.

If you run auto QoS on a 3550 for Voip (auto qos voip) , you will see the
resulting config matches protocol RTP along with matching ACL entries with
the ports.

Just my opinion though.
