In RIP you have to use passive-interface default and no passive interface for required interfaces. In EIGRP you can advertise the required interfaces(networks) by using wild card mask. For EIGRP I would use both passive-interface with no passive interface for selective interfaces and use wild card option to advertise required networks(say network 10.10.10.8 0.0.0.3)
