What if I were to use the virtual-template on a frame relay point to
point subinterface? Last time I did it, it remained a P2P interface?

Yes, the properties of the VT are copied (cloned) to the virtual-access
for communication. However the main difference IMHO is that the
virtual-template creates a multipoint interface, whereas teh dailer is a
point to point interface, enabling the dialer interface to ping itself.
