As you suspect, Solie's statement that "...they will not forward packets to
a gateway of last resort unless the global ip classless command is set" is
not exactly right. It is only true regarding lookups for subnets of
connected classful prefixes. For example, the router will not use the
gateway of last resort to get to 10.10.10.0/24 if it has a connected
interface with prefix 10.20.20.0/24. In other words, if your network
consists of all subnets of 10.0.0.0, and ip classless is NOT configured,
then the router will not use the gateway of last resort.

As regards the use of RIP versions in the lab, my own advice would be to use
RIP version 2 unless specifically directed otherwise. As always, careful
reading is required.
