Doug,
I'd go with an EMI 3550, and a 2950. You need a 3550 to learn all the layer 3 interface possibilities. But not two. The nice part is that both the 3550 and 2950 are current models, and can be resold for probably about what you paid for them. Of course, if you try to sell them 3 years from now, you'll take a killing.
