Yet another question you need to ask yourself what kind of code you are
intending to run on this routers. With introduction of late 12.2.T into the
CCIE exam, 2610 becomes limited. I am yet to find a way to put any full
featured code later then 12.2.8T onto 2610. So you may want to consider
2611XM or 3640. The later going to be cheaper, I would expect but line
cards are more expensive, so you have to shop around.
Having said that if trunking is all you need 1721 or 2610 would do just fine
for dot1q only.

As of IOS 12.1(5)T, you can also do dot1q trunking on a 2610 with just a 10
mbps interface, so the Fast Ethernet requirement no longer applies. I would
however recommend getting a 2600 with a Fast Ethernet card like Rob
suggested or a 2620 with a Fast Ethernet interface. This will allow you to
practice both dot1q and ISL trunking. The bare minimum to practice InterVLAN
routing with dot1q would be a 1721 or 2610.
