Hi Paul,
You can actually work without the command "Switchport mode access", because by default the switching mode (Operational) in any interface is "static access".
In case you dont specify this command, the administrative mode of the switch port is "auto". In this case, if it is connected onto another port which is configured as "trunk", it negotiates and puts itself under the "trunk mode".
In order to avoid this, the best practice is to statically configure all the access ports with "switchport mode access" command, so that it can never become a trunk port.
