Not a single book,
but you might want to read stuff from Integrating Voice & Data Networks &
Cisco Voice over IP, FR, ATM (both are cisco press books). I found the first
one to be quite indepth discussion. Lot of theoritical stuff in there. The
2nd one is the course book, and as all course books are it explains the
subject from a Cisco point of view (all commands and explanaations blah)
