This might be limited (not allowed) in lab, but you could configure:
r1 to r2 link as RIPv1 and "configure the send/receive version 1 only under e0
and r1 config"
      and "configure the send/receive version 1 only under loop0"
r2 to r3 link as RIPv2 and "configure the send/receive version 2 only under e1
and r3 config"

I re-read original email and they mentioned Loopbacks specifically.

R5(config)#int lo0

R5(config-if)#ip rip ?
  authentication Authentication control
  receive advertisement reception
  send advertisement transmission
  v2-broadcast send ip broadcast v2 update

R5(config-if)#ip rip receive ?
  version version control

R5(config-if)#ip rip receive version ?
  1 RIP version 1
  2 RIP version 2
  <cr>

But you'd probably not be allowed to modify versions in the lab. "Ahh, Calgon
take me away."
