You don't need Layer 3 switches for this. Any Cisco switch can test what you want with VTP. You could also read the Cisco docs on VTP pruning.

Your other question about TCP behaviour doesn't need any switches at all. You could use any pair of systems, but you're probably better off reading a book on how TCP works.
