You need to schedule downtime..
There is NO WAY to do this with SSO reliably... I had the pleasure of doing 13 in 9 months...
And a manager that wanted even an empty office on a Saturday to experience "no downtime"...
Just pre-config the sup 720's in spare chassis and then pull the sup2's in a maintenance window and slap in the sup720's and fan2's.
Have a few spare fan2's as we got some D.O.A. FAN2's from China a while back

Subject: sup2 to sup720 upgrade procedure?
Hello,
All 6509s will have the power supplies and fans upgraded based on
cisco recommendations. Hardware has all been verified Sup2 is running ios.
I
need a procedure that tells me how to simply upgrade everything from the sup2
to sup720 in regards to configurations etc.\
I will be started with the
standby 6509 once succesfull failing over and working on the second box.
A
guide to a procedure is greatly needed and appreciated as well as your
experinec notes etc in doing such an upgrade.
