I think even the ProctorLabs and other rack-for-rent setups typically use 1
or 2 3550's with 3560's filling out the switching equipment. Since you can
do almost all of the same technologies with 3550, a couple 3560's gives you
enough to do the PVLAN, IPv6, and QoS features.
My home lab is 4x3550 as the lab switches. I am running virtual routers
with the breakout switch method, using a 3750 as the breakout switch. It
works beautifully.
