1. You need to restore the pub database, drop the replication and re-sync
pub database to all subs.
2. Yes u can always play with the mirror trick - i.e. take 1 disk out and
insert it to mirror.

AFAIK - P2V is dirty way to do. A cleaner approach would be Take the pub
database back, install a new pub and restore it to newly install pub VM.
btw, Virtulization for UC is only supported on Cisco UCS platfarm.
Unfortunatelly no V-Motion or FT or any other fancy stuffs are supported
yet. VM must have dedicated resources!
