Are you completely committed to wireshark? We had a similiar situation a
while back and ended up using Freeware edition of PRTG, setting up a sensor
and spanning a port on the switch. It records conversations, percentages of
protocol traffic, etc... Might be more up your alley for what you are
wanting to do as you can do some tuning on the software itself. Netflow
also comes to mind, but I am not sure what kind of infrastructure you have
in place.
