I did run about 20 without any problems. I would certainly pay attention to
bandwidth. If each ESX runs 10 VMs, so 500 virtual can generate a lot of
traffic that could be hard on the switch or uplinks. I would work with LAN
team to make sure that they do not put all heavy traffic VMs in one box,
like 10 FTP and file servers. My experience was that they only paid
attention to servers CPU and did not really care about network
limitations...

Our Lan team likes to implement trunking on 50 ESX servers (as they will
have virtual servers in different vlans means tags) which are connected to
one switch. It means that I have to configure trunking on 50 interfaces
connected to the switch.
Is there any issues with 50 trunks on one switch?
