I personally used the Titanium simulator. (Just a VMware image). It works pretty good and it's like Juniper Olive, only simulating the control-plane, so you can't really use it to send traffic around the network (no transit traffic is allowed), so only control-plane traffic works.
You can practice all protocols and stuff, but you can't go deep in the linecard and QoS stuff, which is quite important since the N7k is a hardware forwarding box. I do have the Titanium image, but I can't share it unfortunately. I got it from Cisco in one of the first trainings and I only got it since we are a gold partner.
Like mentioned before the GOLD or PEC labs are awesome! Try you Cisco AM and see what he/she can do for you to arrange access.
