For theory I would recommend books. MPLS Fundamentals is a reaaally
good one.
The MPLS-Enabled Applications book will teach you after that how MPLS
Theory really works.
For videos I would recommend the CCIE Service Provider Class on Demand
from one of our colleagues. Google for my blogpost about it
(rickmur.com) where I reviewed all the material.
