Yes you sure can!!
I am busy with setting up everything virtually on 1 machine...

the goal is to have:
 Cisco Unified Communications Manager 7.0
 Cisco Unified Contact Center Express 7.0
 Cisco Unified Presence 7.0
 Cisco Unity Connection 7.0
 XP machine with IP softphones (HQ)
 XP machine with IP softphones (BR-A & BR-B)

all running virtual together with Dynamips/GNS3.
