For lab studies, we also use them to simulate other networks. Think about
route generators, testing purposes with extended command like ping for
instance, etc.
Create a loopback and advertise it.
Check reachability to and from a loopback.
Maybe an OSPF Stub area (no extra router needed).
Remember for CCIE lab purposes 3 routers is a lot and usually sufficient for
most things and loopback interfaces help make this a very true statement.
They have their uses, no doubts - in addition to the ones already mentioned
which are the real-life reasons.
