Whats wrong with just having your server available via RDP? That's how I do
it.

I am a huge fan of Microsoft OneNote, I know you mentioned it was not
hosted, so I use Microsoft Mesh to sync my OneNote notes between my
desktops and my tablet PC. If you organize your notes using 3-ring
binders, OneNote will be very familiar to you.
