What about traceroute (tracert.exe) from a Windows box? :-)

It uses ICMP (type 8, echo) -- three packets per probe (to get
min/max/avg) with incrementing TTL values, instead of UDP.

I suppose just about any IP-based protocol could be used to trace a
path, since TTL is a field in the IP header.
