Have you tried "telnet (ipv6-addr) /source (addr)" ?

I have no idea whether it works or not, but I'd give that a whirl!

Is it possible to force a router to telnet via IPv6 from a certain
interface?

e.g. an IPv6 equivalent of "ip telnet source-interface"

there is no "ipv6 telnet source-interface" command...
