This is a typical question where you can get the answer directly from
the Doc CD. Try to get familiar with navigating it, as it is your only
friend in the lab (other than Mr Proctor, if you can count him as one) .

The short answer is, it depends on platform. For C3560, the maximum is
64. My switch has only 24 port, and I can use all of them as destination
ports ;) For C3550, you can only have one destination port.

Info is located under:

Catalyst 3560 Switch Software Configuration Guide, Rel. 12.2(46)SE
Configuring SPAN and RSPAN
Understanding SPAN and RSPAN
SPAN and RSPAN Concepts and Terminology
Destination Port

*The maximum number of destination ports in a switch is 64.

Similarly do it for C3550, you will reach:

C3550 SPAN Configuration Guidelines
*You can have only one destination port per SPAN session. You cannot
have two SPAN sessions using the same destination port.

C3560
Rack1SW1#sh run | in monitor
monitor session 1 source interface Fa0/1
monitor session 1 destination interface Fa0/2 - 24

C3550
Rack1SW3(config)#monitor session 1 destination interface fa0/2
Rack1SW3(config)#monitor session 1 destination interface fa0/3
% Only one destination port allowed per SPAN or RSPAN destination
session
