How about this:
"show ip eigrp interfaces detail"

which tells you if the authentication is on and what key-chain is used.

While I don't have any troubles in configuring and using debugs to
validate my EIGRP neighbor sessions successfully authenticate, is there
a simple "show"
command to verify this, a la "show ip ospf interface" for OSPF?
