Sounds like a great start to me!
You might want to consider some analog interfaces, such as fxs/fxo and an ATA, those are in the blue print and should not cost too much.

ONE (3640 + NM-2E2W+ WIC-1Tx 2 +NM-HDV-1T1-12 + VWIC-MFT-2T1 )
CAT3550 with inline power.
CallManager Server/Unity/CRS (3 Servers)
4-5 7960 IP Phones.
Also does the simulator(Dynamips) can do the above home lab (except 6k).
