What do you mean no holdtime. How do you know if a neighbor is dead?

sh ip eigrp int detail
Will display the hello timer, default 5 seconds.

It is configured on a per interface basis:
conf t
int X
ip hold-time eigrp <proc id> <seconds>
ip hello-interval eigrp <proc id> <seconds>
end
